Ginger Carrot Soup

Ingredients

  • 1 tbsp tallow

  • 1 onion, chopped into large chunks

  • 2 cloves garlic, chopped

  • 2 tbsp fresh ginger, chopped

  • 5 cups carrots, chopped

  • 32 oz bone broth

  • 1 tsp salt

  • 1 (13.5 oz) can full-fat coconut milk

  • Juice of 1/2 lime

Directions

  1. In the Instant Pot, hit the sauté function. Add tallow and cook the onion for about 5–6 minutes.

  2. Add garlic and ginger and cook for 1–2 more minutes.

  3. Add carrots, bone broth, and salt. Cook on high pressure for 5 minutes, then allow a natural release for 10 minutes.

  4. Use an immersion blender or transfer to a blender and puree until smooth.

  5. Stir in coconut milk and lime juice.
