Primal Chili

Ingredients

  • 1 lb ground beef (bonus points for an organ blend)
  • 2 cloves garlic, minced
  • 2–3 tbsp tallow
  • 1 large onion, chopped
  • 1 stalk celery, chopped
  • 4 medium carrots, chopped
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 2 cups bone broth
  • 1 lb sweet potato, peeled and chopped

Directions

  1. In a large pot, heat the tallow.

  2. Add the garlic, onion, celery, carrot, and seasonings. Sauté for about 5–7 minutes, stirring frequently.

  3. Add the broth, diced tomatoes, tomato sauce, and sweet potatoes. Bring to a boil, then reduce to a simmer with the lid on for about 35–40 minutes.

  4. While simmering, brown the ground beef and drain the fat.

  5. When the chili is done cooking, stir in the ground beef.

  6. Allow to cool, then store in 16- or 32-oz paper containers. Label and freeze.
