Ingredients

  • For the Pumpkin Parfait

  • 1 lb. pumpkin puree

  • 1.1 lbs. Greek yogurt

  • 4 tbsp. mascarpone cheese

  • 1 tbsp. vanilla extract

  • 2 tbsp. coconut sugar

  • 2 tsp. ground cinnamon

  • ¼ tsp. ground nutmeg

  • 4 tbsp. dark chocolate chips
  • Optional - 4 tbsp. chopped hazelnuts

Directions

  1. Make the pumpkin mixture: Add the pumpkin puree, Greek yogurt, mascarpone cheese, vanilla extract, coconut sugar, cinnamon, and nutmeg to a large mixing bowl.

  2. Mix until smooth: Using a hand mixer or whisk, blend the ingredients until smooth and creamy.
  3. Assemble the parfaits: Divide the pumpkin mixture evenly between 6 serving glasses or jars.
  4. Chill: Cover and refrigerate for at least 30 minutes, or overnight if preparing ahead.
  5. Add the toppings: Just before serving, drizzle each parfait with honey and top with dark chocolate chips and chopped hazelnuts.
  6. Serve: Enjoy chilled as a simple fall breakfast, snack, or dessert.
