Salted Caramel Overnight Oats

    • 1 tbsp. chia seeds
    • 5 fl oz milk of choice

    • ¼ tsp. vanilla extract

    • 1 tbsp. peanut or almond butter

    • 1 tbsp. maple syrup
    • Pinch of salt

    • 2 squares dark chocolate, melted

    Directions

    1. Prepare the oat base: Add the rolled oats, chia seeds, almond milk, and vanilla extract to a bowl or jar. Stir well to combine and let sit for a few minutes to allow the mixture to begin thickening.
    2. Make the caramel: In a small bowl, mix together the peanut butter, maple syrup, and a pinch of salt until smooth.
    3. Layer: Pour the caramel mixture evenly over the oat base.
    4. Add the chocolate: Drizzle the melted dark chocolate over the caramel layer.
    5. Chill: Cover and refrigerate overnight, or for at least 4–6 hours, until thickened and set.
