Simple, comforting, and incredibly versatile, White Rice Congee is a timeless staple that has nourished families for generations. Made with just jasmine rice, sticky rice, and water, this slow-simmered rice porridge develops a creamy, soothing texture that's easy to digest and endlessly customizable. Enjoy it as a savory meal with leftover meat and vegetables or as a naturally sweet breakfast topped with fruit, nuts, or a drizzle of raw honey. It's an excellent recipe for postpartum recovery, gentle nourishment, meal prep, and freezer cooking.

Ingredients
1.5 cups white jasmine rice
0.5 cups white sticky rice
Directions
Rinse the rice several times in water until the water runs clear.
Add the rice to a pot along with 1 quart (32 oz) of water. The water should cover the rice by about 1.25 inches, so add more as needed.
Bring to a boil, then reduce to a simmer and cook for 45 minutes.
Check and stir often, adding more water as necessary.
