This nourishing ginger turmeric chicken soup combines tender chicken, cauliflower, carrots, garlic, and warming spices for an easy, protein-rich meal ready in 30 minutes.

Ginger Turmeric Chicken & Cauliflower Soup

Ingredients

  • 8 oz cooked chicken breast, shredded or chopped

  • 2½ cups cauliflower florets

  • 2 medium carrots, chopped

  • 1½ tbsp fresh ginger, grated

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • ½ tsp turmeric

  • ½ tsp black pepper

  • 2 tbsp tallow or olive oil

  • 2–3 cups chicken bone broth, plus more as needed

  • Salt, to taste

  • Additional black pepper, to taste

Directions

  1. Heat 1 tablespoon of tallow or olive oil in a medium pot over medium heat. Add the onion, garlic, turmeric, and black pepper. Sauté for 2–3 minutes, until fragrant and the onion begins to soften.

  2. Add the cauliflower and 2 cups of chicken broth. Cover and simmer over medium-high heat for about 7 minutes.

  3. Add the grated ginger and chopped carrots. Continue cooking for another 5 minutes, or until the carrots are tender.

  4. Using an immersion blender, partially blend the soup until it thickens slightly while leaving some of the vegetables intact. This creates a naturally creamy texture without fully pureeing the soup.

  5. Stir in the cooked chicken and add another ½–1 cup of broth, depending on your preferred consistency. Simmer for 5–6 minutes to allow the flavors to come together.

  6. Stir in the remaining tablespoon of tallow or olive oil. Season with salt and additional black pepper to taste, then serve warm.
