Ingredients

  • 1/4 cup flaxseed meal
  • 1/2 cup water
  • 1 cup coconut sugar
  • 1/3 cup melted coconut oil or grass-fed butter
  • 1 tsp vanilla extract
  • 1 2/3 cups oat flour
  • 3/4 cup old fashioned rolled oats
  • 1/4 cup brewer's yeast (check for gluten-free if needed)
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 2/3 cup chocolate chips

Directions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, mix the flaxseed with water and let sit for 5 minutes.
  3. Add the coconut sugar, melted and cooled coconut oil or butter, and vanilla extract. Mix well.
  4. Add the oat flour, rolled oats, brewer’s yeast, baking soda, cinnamon, and salt. Mix until well combined.
  5. Fold in the chocolate chips.
  6. Use a medium cookie scoop and space the dough about 2 inches apart. Makes about 20 cookies.
  7. Gently press down on the tops if you prefer thinner cookies.
  8. Bake for 10–13 minutes, until the edges are slightly golden brown.
  9. Allow to cool for 10–15 minutes. Transfer to a wire rack to finish cooling. Leaving them on the baking sheet will help them set up and hold together.
  10. After cooling, freeze in a vacuum-sealed bag if saving for later.
